The first hydraulic press was of French manufacture and origin. The mashed olive dough was spread in the rubber bags which were stacked evenly and in a row on top of each other. When they were ready, the main pump started the hydraulic press to remove the pressure through the dough, oil and water. Then they ended up in the dives.
